Tomato jam for adults. A different jam that will accompany your mornings meals but not only these

Ingredients

  • 10-12 large tomatoes
  • 1 teaspoon chili flakes or as we want
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon of cinnamon powder
  • Juice and zest of 1 lemon
  • A pinch of salt
  • A pinch of pepper
  • 250gr. brown sugar
  • 250gr. white sugar
  • 2 tbsp Basil
  • 1 teaspoon of vodka for each jar

Method

Step 1

Define a cross atop each tomato and pour 3 minutes in plenty of boiling water. strain and just start to get cold, Peel, cut the hard bits and chop, as much as we can.

Step 2

Place them into large saucepan along with the ginger, juice and zest of lemon, Salt, pepper , Chili and cinnamon.

Step 3

Leave it to a boil and add the two kinds of sugar and Basil.

Step 4

Lower the heat and stir until sugar dissolves. Cook on low heat for 45-50 minutes, stirring occasionally.

Step 5

Turn off the heat and leave it with the lid covered up to cool completely. Divide into sterile jars and pour a teaspoon of vodka, before we close with lids. Kept open in the fridge at least 6 weeks.
