Lemon chicken with Orzo pasta and olives in minimum time I prepared today and present to you straight away. Delicious, easy peasy and very simple materials. For the story, I had enough pasta in the pantry and I was looking for a delicious and simple recipe that won't have much time and voila.

Ingredients

  • 1 chicken fillet cut into pieces
  • ¾ Cup Orzo medium
  • salt & pepper
  • 2 tablespoons olive oil
  • 1 ½ Cup chicken broth
  • 2-3 garlic cloves crushed
  • 1 medium onion chopped
  • 1 tablespoon fresh oregano, finely chopped or 1 teaspoon dried
  • Juice and zest of 1 lemon
  • ½ lemon, cut into slices
  • ¼ Cup kalamata olives, pitted, whole or washers

Method

Step 1

Season the chicken and heat half oil in a deep frying pan. Leave to get brown from all sides, about 5 minutes on each side and remove the edge.

Step 2

Pour the remaining olive oil and saute the onion and garlic. Add the Orzo, the broth and season with salt and pepper. Stir and cook for 5-6 minutes.

Step 3

Add the remaining ingredients and the chicken, stir and continue cooking for other 15-20 minutes. If necessary add a little warm water to stay the Orzo juicy and not stick to the pot. Turn off the heat and allow to stand 5 minutes before serving.
