Spring salad with asparagus

A very healthy and delicious spring potato salad with asparagus we propose today. Prepares very easily and we can fill in any of the other seasonal sweet we like.

Ingredients

3 medium potatoes

½ pound of asparagus

10 radishes, cut in half

½ Cup parsley, finely chopped

2-3 fresh onions

1 Cup of various pickled vegetables

For the dressing:

3 tablespoons olive oil

2 tablespoons white vinegar

salt & pepper

½ teaspoon garlic powder

½ teaspoon Basil

¼ of spoonful of fresh thyme

Method

Step 1

Mix all the ingredients together for the dressing and keep aside.

Step 2

Pour potatoes in saucepan with a generous amount of boiling water and place over a metal colander or a special utensil for steaming. Place the asparagus and cook gia15-16 minutes.

Step 3

Just boil potatoes, drain and allow to cool. In a bowl, add the potatoes cut into pieces, the radishes, the pickled vegetables, chives ,parsley and half dressing.

Step 4

Toss and transfer to a platter or bowl. Place the asparagus on top and drizzle with the remaining dressing to serve.
