Marinated portobello with mashed beans

Marinated Portobello with mashed beans and an egg is my proposal for today. The egg, for other optional for me required because it is true love!

Ingredients

4 eggs optional

4 large Portobello mushrooms

salt & pepper

1 tablespoon fresh oregano

2-3 cloves garlic chopped

2 tablespoons olive oil

For the bean puree:

1 large cup of soaked beans soften

1 tablespoon olive oil and extra for serving

salt & pepper

1 medium onion chopped

2 garlic cloves crushed

¼ Cup white wine or water

¼ Cup yoghurt

Method

Step 1

Stir the oil, garlic, oregano and salt and pepper in a bowl. Put the mushrooms in a wide pan and pour the mixture. Brush with the hands to go everywhere. Cover and keep in refrigerator 30 minutes.

Step 2

Transfer to baking pan with the juices in the Pan and bake in preheated oven at 190C about 30 minutes. If we have coals, It is the ideal.

Step 3

Meanwhile boil and drain the beans. Heat the oil in a saucepan and saute the onion.

Step 4

Add garlic and beans and season with salt and pepper. Add the wine or water and lower heat. With a fork or puree tool, push melted bean. It is not necessary to become completely smooth the mixture. Add the yogurt and stir very well.

Step 5

Divide the puree into dishes and place over the mushrooms and if we want from an egg eye. Sprinkle with a little extra olive oil, Sprinkle with a little freshly ground pepper and serve.
