Warm Salad with asparagus and baked bread for a hearty dish that is eaten as an appetizer as well as the main meal, Depending on tastes.
- ½ kilo of green asparagus
- 4-6 sliced mpagiatikoy bread
- 250gr. Cherry Tomatoes
- 6 tablespoons olive oil
- 2 tbsp balsamico
- salt & pepper
- 1 garlic clove crushed
- ½ teaspoon honey
- ½ teaspoon dried Basil or oregano
- ¼ Cup parsley, finely chopped
Peel the asparagus and cut each stem into 2-3 portions. The arrange them on a baking sheet lined with parchment paper and sprinkle with a little of the oil. Do the same with the slices of bread.
The season lightly with salt and pepper and bake in preheated oven at 190C for 10 minute bread and 20 vegetables.
Meanwhile, combine the remaining oil with balsamico, honey, garlic, the Basil and a little spice and prepare a dressing that keep aside. Transfer to platter, drizzle with the dressing and sprinkle parsley to serve.
