Corn and zucchini salad with dressing avocado lime

Corn and zucchini salad with dressing lime avocado for a lighter festive salad , beyond the mainstream and stereotypes, Pomegranate, nuts, rocket etc., that we often prefer these days. Although personally I love them, this year I can replace it with zucchini, corn, cherry tomatoes and dressing avocado lime. Stunning!

Ingredients

For the salad:

2 medium zucchini, grated or cut spiral or as we like

2 cups corn

1 Cup cherry tomatoes cut in half

1 medium onion chopped

¼ Cup parsley, finely chopped

¼ cup sunflower seeds

1 tablespoon olive oil (Optional)

For the dressing:

½ avocado

1 fresh onion

¼ Cup parsley, finely chopped

salt & pepper

Juice from 1 lime

1/3 Cup water

1 clove of garlic

Method

Step 1

Beat all ingredients for dressing in multi and keep in the refrigerator until use and for other 2-3 up 5 days.

Step 2

Mix in large bowl zucchini, cherry tomatoes, corn, onion and parsley.

Step 3

Transfer to a bowl or serving platter and sprinkle with oil if you use it and then the dressing. scatter sunflower seeds and serve.
