Goat meat with mashed potatoes and sundried tomatoes truffles . Easter and spring plate for gourmet situations that will impress.

Ingredients

For the goat:

½ kilo goat cut into pieces (or any piece for pot)

400ml tomato juice

400ml water

1 tablespoon tomato paste

A pinch of sugar

salt & pepper

1 large onion chopped

2 garlic cloves crushed

1 large carrot cut into rings or 1 ½ Cup of baby carrots

½ teaspoon thyme

½ teaspoon Basil

For the mashed:

1 ½ kg of potatoes

1 cup sour cream

½ Cup milk

1 tablespoon butter

salt & pepper

For the truffles( 16-20 pieces):

1 Cup almonds

¼ Cup Sesame and extra for coating

¼ Cup flax seed crushed

1 teaspoon garlic powder

salt & pepper

½ teaspoon of paprika and a little more for coating

1 tablespoon of oregano and a little more for coating

1 Cup Sun-dried tomatoes

3 normal dates

1 ½ tbsp tahini

6 tablespoons olive oil

4 tablespoons lemon juice

1 tablespoon vinegar balsamico

 

Method

Step 1

For the goat: Heat the oil in a wide skillet and saute the onion and garlic. Pour the carrot ,tomato paste and sugar and stir well to dissolve the tomato paste and sugar.

Step 2

Add the tomato juice and water and bring to a boil. Carefully pour the meat, herbs and Spice. Let it simmer for 2 ½ hours.

Step 3

For the puree: Meanwhile Peel and pour the potatoes in plenty of boiling water for 20-30 minutes, until get soft.

Step 4

Drain them and transfer to Bowl. The press with fork or with the special tool to puree and add all the remaining ingredients. Mix thoroughly and keep in a warm place.

Step 5

For the truffles: Soak the sundried tomatoes and dates in water , for ½-1 hour.

Step 6

Put it in multi almonds, the Sesame, Linseed, paprika, garlic, oregano and salt and pepper. Then whisk and add the sun-dried tomatoes, the dates and all the remaining ingredients.

Step 7

Beat again and add more oil if necessary, without do ointment. Leave the mixture in the refrigerator for 1 time and form into round balls, medium size.

Step 8

Mix sesame seeds, paprika and oregano in a deep dish and pass in there the truffles to stick with the mixture. put in dish or in paper sleeves.

Step 9

Divide the puree into dishes ,meat and sauce from the Pan. put around plate the truffles and serve.
