Kritharoto with cottage cheese and leftover turkey , and as you will see for yourself, is a dish easy, tasty, lightweight and non expensive. What more could you want;
- ¾ cup orzo
- 1 ½ - 2 cups chicken broth
- 1 tablespoon lemon juice
- 2 tablespoons lemon zest
- 1 tablespoon olive oil
- ¾ cup cooked turkey, chopped or shredded
- 2 tablespoons Parmesan cheese grated
- 2 tablespoons of cottage cheese
- Parsley, finely chopped for serving
Place in a saucepan the broth to a boil. Add the orzo and lower heat. Add salt and pepper and pour the juice and lemon zest.
Close the lid and is cooked for 12 minutes.
Add the Parmesan cheese and the turkey and mix. Cook for another 6 minutes and switch off stove.
Let it stand 2 minutes and hand out on plates. with spoonful of cottage cheese on each plate and plenty of parsley.
