Ingredients
- 1 medium Leek chopped
- 1 tablespoon olive oil
- 2 eggs pepper
- 1 teaspoon of mustard
- ¼ cup chopped chives
- 120gr. Gruyere cheese grated
- 1 Cup bread crumbs or bread crumbs as get
Method
Step 1
Heat the oil in a saucepan and saute the leeks until tender for 3-5 minutes. Leave it aside to cool.
Step 2
Meanwhile, in a bowl, beat eggs and stir in the mustard and a little spice. Add the chives, the cheese and breadcrumbs. Add the leeks and stir with a spoon. If needed add extra breadcrumbs.
Step 3
Elongated shape croquettes and put in platter. The cover with cling film and keep in the refrigerator for at least 20 minutes or all night.
Step 4
For baking put croquettes in pan lined with greaseproof paper and put it in a preheated oven at 200 c for 13-15 minutes after we get back from the other side, so about, until golden. Serve immediately ,hot, plain or with a sauce of your choice.
