Caesar salad from home with homemade croutons and dressing . Add cherry tomatoes, grilled chicken, tuna canning, egg or whatever else we like for a full meal.
For the dressing:
4 Heads of garlic
2 ½ tablespoon of olive oil and a little more
2 tablespoons lemon juice
1 tablespoon capers
4-5 anchovy fillets
1 teaspoon Dijon mustard or that we prefer
2 tablespoons Parmesan cheese grated
For the croutons:
1 ½ Cup of stale bread cut into cubes
1 tablespoon olive oil
1 teaspoon of mixture of herbs of your choice
salt & pepper
For the salad:
2-3 cups curly salad chopped
1 small chopped radicchio
1/3 Cup Parmesan into slivers
For the dressing: Put garlic in foil, sprinkle with a little olive oil and wrap. Bake in a preheated oven at 190 c for 30-40 minutes. Let it cool down and press to take off the roasted garlic.
Transfer in multi with everything else for the dressing and keep in the refrigerator. If you want, you can add a little water to a more fluid dressing. keep in the refrigerator until use.
For the croutons: Put in a bowl the bread and sprinkle with oil. Sprinkle with a mixture of herbs of your choice and a little salt and pepper and mix. Transfer to a baking sheet lined with parchment paper and spread. Bake in a preheated oven at 190 c for 16-18 minutes or until golden brown.
For the salad: Put it in a salad bowl and pour 2-3 tablespoons of the dressing and Croutons. Mix well and transfer to a serving bowl. Diaskorpizoyme Parmesan flakes and whatever else choose and sprinkle with a little fresh olive oil to serve.
