Turkey fillets with orange and potatoes with truffle oil

Turkey fillets with orange and potatoes with truffle oil and Parmesan for a full festive dish, you won't waste your time but will reward your trouble.
Ingredients
For the Turkey fillets:
400gr. Turkey Tenderloin in 2 portions
1 tablespoon paprika
2 tablespoons Rosemary chopped
2 tablespoons chopped fresh oregano
salt & pepper
½ cup honey
Juice from 1 Orange
Zest of ½ Orange
1 ½ tbsp apple cider vinegar
2 teaspoons mustard
1 tablespoon olive oil
For the potatoes:
350gr. Potatoes
1 ½ tbsp truffle oil
salt & pepper
1 tablespoon olive oil
½ Cup Parmesan cheese, grated
Method
Step 1
For the Turkey fillets: Brush the Turkey with olive oil and sprinkle with herbs and salt and pepper to stick to all sides. Place on a tray lined with greaseproof paper.
Step 2
Meanwhile put in a saucepan all the remaining ingredients for the Turkey fillets. Let them get boiling, reduce heat and let simmer for 6-7 minutes.
Step 3
Remove from the heat and leave to cool a little. Pour over the Turkey and bake in preheated oven at 180C for 30 minutes.
Step 4
For the potatoes: Until the potatoes on a tray lined with greaseproof paper. sprinkle with olive oil and pepper. Bake at 180 c for 30-40 minutes, until softened and browned.
Step 5
Move them into a bowl and sprinkle with truffle oil. Sprinkle the Parmesan cheese and stir very well.
Step 6
To serve place Turkey fillets to plates or a platter and beside the potatoes .
