Baked Turkey tenderloin with pumpkin and pineapple because I don't need to cook whole Turkey to feel Christmas.

Ingredients

For the Turkey:

2 Turkey breasts, cut in 2 or in 4 (about 800gr.)

¼ of a spoonful of sweet paprika

¼ teaspoon oregano spoonful of dry

2 teaspoons thyme

¼ of a spoonful of fresh nutmeg

A pinch of sugar

salt & pepper

2 tablespoons olive oil

For vegetables:

2 cups pumpkin, cut into cubes

2 cups fresh pineapple, cut into cubes

1 large onion, sliced

1 tablespoon olive oil

2 teaspoons honey

salt & pepper

Method

Step 1

For the Turkey: Put them in a large bowl and pour over the rest of the ingredients.

Step 2

The brush very well, with clean hands and leave it covered in the refrigerator all night.

Step 3

For vegetables: Put them in a large bowl the pumpkin, the pineapple and onion. Sprinkle with salt and pepper and pour all the remaining ingredients.

Step 4

Mix with hands , to meet good materials and put them in the Pan. Meat Akoympame, directly over the vegetables or grilled over these. Bake in a preheated oven at 180 c for 45-50 min or until softened vegetables and rodokokkinisei the Turkey.

Step 5

Serve the dish warm plain or with some white rice of your choice.
