- 1 small pumpkin
- 2 medium carrots
- 1 medium zucchini
- 1 small onion chopped
- 2 garlic cloves crushed
- 1 tablespoon olive oil
- ¾ cup cooked turkey, chopped or shredded
- ½ Cup peas
- 3 cups chicken broth
Heat the oil in a skillet and saute the onion for 5 minutes until it begins to soften.
Meanwhile peel and finely chop the pumpkin, carrots and zucchini and add to pot along with garlic. Sauté 2 minutes and add the broth, salt and pepper, Depending on tastes.
After 10 minutes add the peas and turkey. Close the lid and cook over medium heat for 30-40 minutes.
