Winter potato salad with red sauerkraut, yogurt and eggs. Full meal or accompanying, Depending on tastes and mood of the day. Very delicious with grilled burgers or classic burgers.
- 4 small potatoes
- 1/3 Cup celery chopped
- 1 Cup red sauerkraut
- ½ cup chopped marinated cucumbers
- 2 boiled eggs chopped
- salt & pepper
- 1 Cup of yogurt strained
- ½ teaspoon cumin
- 2 tablespoons olive oil
- 1 tablespoon onion flakes or powder
Pour potatoes in plenty of salted boiling water for 15-20 minutes. Let them cool a bit ,peel and cut them into pieces.
Meanwhile mix the yogurt with the half oil, cumin, the onion and a little salt and pepper and keep aside till use.
Put it in a big bowl potatoes, the gherkins, eggs, celery, the sauerkraut and yogurt mixture and mix very well.
Serve immediately sprinkle with the remaining oil or keep refrigerated until use and for other 5 up 5 days.
