Roast leg of lamb and flavored bulgur with pomegranate and herbs for an Easter dish more flavor and aroma.

Ingredients

For the Lamb:

1 ½ kilo of lamb Shanks, cut for oven

2 large onions, cut in half

3-4 cloves of garlic

Juice from 2 oranges

2 tablespoons olive oil

salt & pepper

1 tablespoon honey

1 teaspoon cumin

A pinch of cinnamon

Parsley, finely chopped for serving

For the flavored bulgur:

125gr. Bulgur

1 Cup lukewarm water or broth

2/3 Cup pomegranate seeds

2-3 tablespoons golden raisins

2-3 tbsp goji berries

1 Cup parsley, finely chopped

1 tea spoon mint chopped

salt & pepper

Juice from 1 Orange

1-2 tablespoons olive oil

Method

Step 1

For the Lamb: Mix the orange juice with the olive oil, honey, cinnamon, the cumin and salt and pepper. Pour this meat and keep in the refrigerator 1 hour.

Step 2

Scatter in the pan the onions and garlic and place over meat. Mix the marinade with a cup of water and pour the remaining ingredients.

Step 3

Bake in a preheated oven at 200 c for 1 ½ hour covered with foil and other 35-40 minutes without the foil.

Step 4

For the flavored bulgur: Place the bulgur in a bowl and pour the water or broth. Let it soak and absorb the liquid.

Step 5

Transfer into a bowl along with the remaining ingredients and stir well. Keep in the refrigerator 1 hour.

Step 6

Serve immediately hot lamb with cool bulgur sprinkle with plenty of chopped parsley
