Vegetable soup with noodles and leftover turkey and I swear is the best way to use turkey leftovers. Dish hearty, rich that children and adults will love. Perfect for cold winter nights that are ahead.

Ingredients

  • 1 cup chopped turkey left or shredded
  • 4 medium carrots, finely chopped
  • 2 ½ cup chopped cabbage
  • 1 small onion chopped
  • 1 cup chopped celery
  • 2 liters chicken broth
  • salt & pepper
  • 1 ½ tbsp olive oil
  • 2 cups noodles short
  • Parsley, finely chopped for serving (Optional)

Method

Step 1

Put the broth to a boil in a large saucepan and add onion, cabbage, carrots and celery. Season and cook for 20-25 minutes.

Step 2

Add the noodles, stir and cook for another 10 minutes. Add the turkey just before closing the fire and stir.

Step 3

Serve the soup warm with chopped parsley and freshly ground pepper.
