Easy orzo salad

Easy orzo salad, with olive oil and lemon caper leftover from last day's menu. Add tuna or serve with salmon or other fish im order to have a main dish for all the family.

Ingredients

2/3 of cup orzo

1 tea spoon mint chopped

½ Cup marinated cucumbers, chopped

2 tablespoons dark raisins

½ Apple cut into cubes

2 table spoons almonds grounded

2-3 tablespoons olive oil and lemon caper or other lemon oil sauce

Method

Step 1

Boil orzo in salted water for 12-14 minutes. Strain and set aside.

Step 2

Add all the remaining ingredients , keeping mint for the time we serve.

Step 3

Add tuna, baked salmon or anything we like and serve.
