Detox salad with winter vegetables that we have on hand. Easy, colourful and although it will sounds strange in your ears, I will say happy (as my dog in the photo). Gives feeling of fullness and well-being.
3 carrots grated or cut as we like
2 ½ cups grated cabbage
2 spring onions finely chopped
1 moderate broccoli cut into bouquets
¼ Cup sunflower seeds
For the dressing:
2 teaspoons honey
1 tablespoon fresh ginger, grated
1 garlic clove crushed
Zest and juice from 1 lemon
2 ½ tbsp olive oil
salt & pepper
Pour the broccoli bouquets in plenty of salted boiling water for 4 minutes. drain and rinse with cold water.
Allow broccoli to cool and chop. Put it in a bowl with carrots, cabbage and onions.
In a bowl whisk all the ingredients for the dressing and pour over the salad.
Serve immediately with sunflower seeds or keep in fridge and 2 up 5 days, leaving the sunflower for the end.
