Peas Curry with eggs for an Indian dish that I create with Easter eggs. Serve with rice, dumplings or pastry of your choice for a complete meal.

Ingredients

  • 3-4 peeled eggs
  • 2 cups peas
  • 1 sliced onion
  • 1-2 garlic cloves crushed
  • 1 tomatoes very finely chopped
  • 2 tablespoons tomato juice
  • 1 ½ tbsp olive oil
  • salt & pepper
  • 1 teaspoon of curry powder
  • A pinch of chilli powder or similar tastes (Optional)
  • ½ teaspoon cumin

Method

Step 1

Heat the oil and saute the onion until it begins to take on color. Pour the garlic, cumin, the chillies and the Curry and stir.

Step 2

Add the tomato, the tomato juice and peas along with 1 Cup water and season with salt and pepper. Mix well and close with the lid and cook for 16-18 minutes.

Step 3

Add eggs and continue cooking for another 2-4 minutes. Remove from heat and serve immediately with fresh or toasted bread, rice or as we like.
