A similar procedure is followed for the construction of Rossini, replacing the peaches and the peach liqueur with strawberries (10-12 portions) and strawberry liqueur respectively.

Ingredients

80 ml dry champagne or other good quality

2 Yellow peaches

few drops of Peach schnapps

ice

Method

Step 1

Prepare a Flûte type glass filling with ice and water to be frozen. Peel the peaches and cut them in half to remove the pips. Then cut them into small pieces and use the Braun multiquick 7 into a mixer. When the glass is ready remove the ice and then pour approximately 40 ml from the peach pulp created. Add few drops of Melocotón and fill with champagne. Finally stir slightly with a spoon and serve immediately
