Tex mex sweet potato for a delicious and healthy meal that you can prepare very very easily. Boiled eggs or "eyes", give the dish a little more.
- 4 medium sweet potatoes
- 4 eggs
- 1 canned red beans
- 1 canned corn
- ¼ Cup parsley, finely chopped
