Kalampokopita with Greens and ricotta cheese

Kalampokopita with Greens and ricotta cheese like a fancy variant of counterfeit. Light, easy and very very tasty.

Ingredients

  • 500gr. Cornstarch and a little more for the Pan
  • 600gr. anthotiro cheese or ricotta crushed
  • salt & pepper
  • 3 large eggs, whisked
  • 3-4 spring onions finely chopped
  • 1 kilogram various Greens for pie
  • ½ cup olive oil
  • ¼ Cup grated pecorino (Optional)

Method

Step 1

Achnizoyme the Greens in a little water to soften. strain, cut slightly and set aside.

Step 2

Saute the onions in 1 tablespoon of the oil and add the Greens. Taste with salt and pepper, stir and allow to cook on low heat for 15-20 minutes.

Step 3

Let it cool completely and pour the mixture into a large bowl. Pour the ricotta and pecorino cheese,If the use. Add the eggs and a little extra salt.

Step 4

Stir and slowly add the cornstarch with remaining oil, keeping a little for the Pan.

Step 5

Just join good materials, transfer the dough to a lightly greased baking pan that we paspalisei with a little cornmeal or bread crumbs Parmesan cheese. Spread evenly over the surface and bake in preheated oven at 180C for 1 time and 15 minutes or until nicely browned on the surface.

Step 6

Allow to cool a little, cut into pieces and serve.
