Kapparosalata garlicky and spicy. That need to accompany the cod of the Annunciation.
- 3 large potatoes
- 3 tablespoons chopped caper
- 1 ½ tbsp green olives, cut into thin slices
- 2 garlic cloves crushed
- 3-4 spring onions finely chopped
- 1 tablespoon vinegar
- ½ cup olive oil
- salt & pepper
- 1 teaspoon oregano
Boil the potatoes in plenty of salted water until tender. The mash in a bowl with a fork or puree tool.
Add all the remaining ingredients, keeping a little oil for serving. Stir well and transfer to serving bowl.
Sprinkle with the reserved oil and decorate with chives, olives, Capers or that we are happy to serve the salad, cold or at room temperature.
