Mixed coleslaw with Tangerine and avocado dressing tahini

Serve mixed coleslaw with Mandarin and tahini dressing avocados and you swear it is not another salad with sprouts. If you tried and you liked the tangy coleslaw with tahini dressing We had prepared before Easter that will enthuse you.

Ingredients

2 cups chopped red cabbage

2 cups chopped white cabbage

1 large carrot, grated

½ bunch parsley, finely chopped

2 mandarins, finely chopped

1/3 Cup sundried tomatoes, chopped

¼ Cup pistachios, peeled

For the dressing:

1 small ripe avocado

¼ Cup tahini

Juice from 1 large Tangerine

1 tablespoon honey

1 teaspoon Dijon mustard

Salt and pepper at will

¼ cup oil

¼ – 1/2 cup of water

Method

Step 1

Beat all ingredients for dressing in multi with final water, so you see how thick or thin the mixture will come out.

Step 2

Mix all remaining ingredients and place in a bowl or platter.

Step 3

Drizzle with the dressing and serve. If we spray and toss with the dressing 1-2 hours before serving to unite the flavors and to marinate vegetables.
