Burgers with beans and rice utilizing both the soup and the rice that's left. Healthy snack, economical and tasty appetizer dish for kids and adults. Do burger in bagel or serve with dipping sauce of your choice. Not often does anything remain
- 1 Cup of leftover bean soup
- ¾ Cup rice cooked (even cooked risotto)
- ½ Cup Parmesan cheese, grated
- 1 green pepper
- 2-3 spring onions finely chopped
- Juice from 1 lemon
- salt & pepper
- 1 medium carrot, grated
- 1 ½ cup breadcrumbs crumb
Put in multi beans, the onions and pepper and whisk to unite, without completely melts.
Transfer to a bowl and add the remaining ingredients. Stir well and keep the mixture in the refrigerator 1 hour or all night. Shape into small patties and place on a baking sheet lined with parchment paper.
Bake in a preheated oven at 190 c for 15 minutes. The flip and bake for another 5 minutes. Serve immediately with fresh salad and / or sauce of your choice or between bagel as a classic burger.
