Spicy pasta with the sauce in a pan for quick and tasty food without to get many utensils. Our recipe today is and fasting for those interested but will definitely enjoy all!
- 1 Eggplant, cut into cubes
- 2-3 tomatoes grated
- 1 Onion grated
- 1 ½ tablespoon jalapenos peppers or pickled, chopped
- 1 ½ tbsp olive oil
- 1 canned red beans, drained
- ¼ Cup green olives, chopped
- 2 ½ cups broth
- salt & pepper
- 1 teaspoon brown sugar
- 160-180gr. Short pasta of your choice
- ½ teaspoon cumin
- Parsley, fresh onions, grated cheese, for serving or that we like
Saute the onion in the pot that we heat the oil and add the Eggplant. Once golden brown add the crushed tomatoes, season with salt and pepper and sprinkle with the cumin and sugar.
Add the peppers and broth and bring to a boil for 15 minutes.
Add pasta, stir and continue cooking for 10-12 minutes. Add the olives and beans, stir and slamming the eye.
Let it stand 5 minutes and hand out on plates, scattering over grated cheese of your choice, chives and parsley chopped and if we want extra olive oil. We can also add beef or chicken, cut into small pieces, be cooked along with the sauce or serve at the end with eye or boiled egg or even a fish fillet.
