Todays Crunchy rice salad is a delicious combination of healthy diet. The detoxifying cauliflower and fibres from the brown rice will fill you up and will give you energy and well-being. Transferred to the Office and are delicious warm and cold.

Ingredients

1 moderate cauliflower divided into bouquets

1 ½ Cup Brown rice, boiled

1 red pepper chopped

¼ Cup goji berries/raisins/cranberries mixed

3 spring onions finely chopped

½ Cup almonds chopped

For the dressing:

1 ½ tbsp honey

1 ½ tbsp olive oil

1 ½ tbsp sesame oil

1 tablespoon rice vinegar or white wine vinegar

2-3 tablespoons lemon juice

2 garlic cloves crushed

salt & pepper, as you like

Method

Step 1

Divide the bouqets of cauliflower in an even smaller and pour on 3-4 minutes in plenty of salted boiling water. Drain and mix with the remaining ingredients of the salad.

Step 2

Beat in mixeraki or in hand the ingredients for the dressing and pour over the salad.

Step 3

Mix and serve the salad cold or warm.
