Modern tabouleh with quinoa at our table today. A lot of parsley with many vitamins and antioxidant actions and quinoa for protein can stand as a light main meal. Will activate your metabolism and give you energy.
- 2 bunches of parsley, finely chopped
- ¼ cup cooked quinoa or as we want
- ½ medium avocado cut into cubes
- 1 small cucumber cut into cubes
- 1 small zucchinis cut into cubes
- 1 small onion chopped
- ½ lemon juice
- 1 tablespoon olive oil
- salt & pepper
In a bowl mix all the ingredients and mix very well.
Leave 10 minutes aside to unite the flavors.
Serve as is or sprinkle with raw almonds, Sesame, chia seeds or whatever else we like.
